Organoleptic properties

Visual appearance

Very dark amber in colour, verging on black. Minimum 90 mm Pfund colour grading.

Aroma

Floral, with a clear hint of malt. Very intense and long lasting.

Flavour

Sweet, with a slight saltiness due to the honeydew.

Texture

Very slow crystallisation or doesn’t crystallise.

Pollen spectrum

53.1% Mediterranean buckthorn (Rhamnus alaternus) as main melliferous plant, 22.1% brooms (Genista sp.), 9.3% vetches (Vicia sp.), 4.4% brambles (Rubus sp.), 2.2% clover (Lotus sp.) and 1.8% almond (Prunus dulcis) as the most important additional melliferous plants.

Geographical origin

Can Knudsen is in the municipality of Banyalbufar in the west of the island of Mallorca in the Serra de Tramuntana mountains, which have been declared a World Heritage Site by UNESCO. The estate has an area of 12 ha and its distinctive features are the view of the vast Mola de Planícia peak, mountain vegetation including a large number of species unique to the Balearics and an outstanding view of the Mediterranean Sea.

Botanical origin

The geographical location, relief and variations in climate between the slopes that face the Mola de Planícia and the ones overlooking the sea shape Can Knudsen and give it a variety of environments. The plant communities present and of most interest for bees are holm oak (Quercus ilex), Mediterranean buckthorn (Rhamnus alaternus), many-flowered Mediterranean heather (Erica multiflora), brooms (Genista sp.), myrtle (Myrtus communis), brambles (Rubus sp.), clover (Lotus sp.), grey-leaved cistus (Cistus albidus) and carob (Ceratonia siliqua) as well as other species that are evidence of a degree of humidity in the soil such as strawberry trees (Arbutus unedo).
